There are over 500 species in the genus Salvia. The species officinalis itself comprises several subspecies and cultivars. Sage (Salvia officinalis) is a sub-shrub of the Lamiaceae family. It is commonly known as ‘sacred herb’ or ‘European tea’. Like many Lamiaceae, sage is part of the Mediterranean flora. The export of sage leaves and essential oil is now an important source of income for countries such as the former Yugoslavia, Albania, Hungary, Germany and France.

It is a branched plant with hairy stems and leaves. The flowers, which vary in colour from blue to purple, are grouped in spikes of six to eight at the top of the flower stems. The flowers usually bloom from May to July. Sage is an aromatic, medicinal, spice and ornamental plant. It thrives in poor, chalky (or even rocky) soil, well drained and always in a warm, sunny position. It is rarely propagated by sowing, but usually by cuttings.

The aerial parts of the plant, which contain fragrant substances, are harvested before or during flowering. After mowing, the plant material must be dried quickly in the shade before distillation.
