Ginger is a herbaceous plant native to India and Malaysia. It produces fleshy rhizomes from which tall, fragrant stems grow, reaching about one metre in height. These stems are topped with long, lance-shaped, evergreen leaves. Its flowers, which grow in spikes, vary in colour from off-white to shades of red and violet.

Cultivation plots are used for two consecutive years, then left fallow for one year to allow the soil to recover its water reserves and production capacity before replanting.

Once the plant has flowered, the rhizomes are ready for harvest, typically five to six months after planting, while they are still fresh and lemony. After harvesting, the rhizomes are immediately steam-distilled to produce fresh ginger essential oil.
