Salvia sclarea, or clary sage, is a very fragrant plant covered with small, fine hairs and has stiff, rather branching stems. The leaves are large, green-grey, opposite, generally stalkless and oval or heart-shaped at the base, forming a rosette. The flowers are white or pale lily-blue, arranged in rather loose racemes.

In France, clary sage is the third most cultivated aromatic plant after lavender and lavandin. Clary sage has a maximum life cycle of five years. There is no harvest in the first year, essential oil production begins in the second year and continues for two to a maximum of four years. Harvesting takes place during flowering, between July and August, at the hottest time of day, when the aerial part begins to glow due to the presence of essential oil droplets. The essential oil is extracted from the flowering stems by steam distillation.
